I own a few other Japanese knives, all by different makers. However, my favorite Japanese knives are those of true chef quality. There are not many of them that I would consider to be chef quality, but this one is. The Japanese Slicing Knife Small Fine Chef Quality NHS1800 is remarkable.
Not only is it one of the sharpest of my Japanese knives but it is also one of the most used in my home. I chop a lot of fresh veggies for my family. Every night, I pull out my Japanese Slicing Knife Small Fine Chef Quality NHS1800, and am able to dice everything nicely and with the utmost of ease.
Fortunately, the blade on the Japanese Slicing Knife Small Fine Chef Quality NHS1800 is not as large as the other Japanese knives of this type. This blade is not too large where it would be difficult to work with. This blade is just the right size to make it very usable by both men and women.
It is also well balanced which gives you the ability to safely cut with it. No more using your weight for leverage, even with an uncooked potato. Everything slices easily with nothing more than minimal pressure. Almost everything you cut with the Japanese Slicing Knife Small Fine Chef Quality NHS1800 will be like cutting butter with a warm knife.
I do highly suggest that you do not put your Japanese Slicing Knife Small Fine Chef Quality NHS1800 in the dishwasher. These Japanese knives must be hand washed and dried in order to ensure they last a long time. If you don’t dry these Japanese knives they will rust and be worthless. You also might want to buy a high quality sharpening stone for these knives to keep them at their best.
